CLEVELAND, Ohio -- Players on Madison chef Tony Romano likes to portion recipes - such as his techniques for making his Nonna's meatballs with cavatelli, and a mellow tomato sauce laced with prosciutto and pancetta. They're such staples, he says he doesn't dare profits the dish - Cavatelli Rustica - off of the restaurant's menu. "It's just a 'standard' on our menu - it never comes off," Romano says. "Things change seasonally on our menu at Players, a longtime dining objective at 14523 Madison Ave. in Lakewood , but Cavatelli Rustica is a perennial," Romano adds. "I took it off the menu once, and the backlash was tremendous. So what is it about meatballs that diners discover so comforting. "You tell me. " Romano declares. And for some reason on top of it, they [meatballs] seem to have become trendy lately. It could be, the chef speculates, that homemade meatballs may be one of those things people may be unwilling to upon on making themselves. "I guess it's because they look complicated to make, but there's really not that much to it," Romano says. "The perception is that it's going to take a thousand ingredients and be time-consuming - where the actuality is, there IS some prep involved, but there's not that much to it. It's more assembly than it is 'work. The recipe he makes, which he simply calls Nonna's Meatballs, is the same recipe he learned as a child, working alongside his framer's mother, Vittoria Romano. At age 90, Vittoria Romano doesn't cook much anymore, the chef says, but her legacy lives on in Players' kitchen. We used to discern bread dough and sauce and other cooking. Among those lessons was the simplicity of cooking a great Italian dinner. Though it seems complicated, putting on a banquet of home-cooked sauce, tender cavatelli dumplings and tender meatballs is fairly easy - if you work in stages and do each component step-by-direction. The sauce itself is fairly easy: some basic prep, mostly chopping, followed by brief sauteeing then simmering. Once the sauce is cooked, it can be set aside in the refrigerator for a day or two until you're adroit to have your guests over. "The biggest trick to making the meatballs is to not overwork the mixture," Romano says. "That toughens the meatballs. The best way to keep the mixture actually light, he adds, is to whisk the wet ingredients (eggs, milk) before you begin mixing everything together. "Then put your ground meats in the bowl, make a well in the centre of the meat, pour your wet ingredients in there, add your dry ingredients, then roll up your sleeves and mix it by hand," Romano says. Lightly toss everything together, turning and working the m by hand. "You know it's thoroughly mixed when it's a uniform consistency," he says. Frying the meatballs browns them, but only partially cooks them. They're finished cooking by simmering them in the tomato impertinence. Both the meatballs and sauce can be assembled, cooked then frozen up to a couple of weeks ahead of time - then thawed in the refrigerator and gently reheated before serving with al dente cooked pasta. To round out the mains course, Romano says a large green salad, tossed with a simple vinaigrette composed of fine extra-virgin olive oil and balsamic vinegar, is a ameliorate complement. Hot garlic bread is a companionable side dish. "There's really nothing like a Chocolate Mascarpone Cheesecake for dessert," he adds. Source:

We had captivated Thing One and Thing Two to Old Sturbridge Village earlier this year, where they both tried, and enjoyed, an old-fashioned Carrot Pie. One of the handouts from our visit was a copy of the "sales receipt" (what they called recipes in the early 19th century) for that pie, and they decided they wanted to make it for Thanksgiving, and make their relatives guess to see if they could tell what was in it. It's a good detail that I spend a lot of time in the kitchen, because recipes in the 19th century didn't tend to include amounts, and skipped a lot of technique, because they were written for an audience that would have learned the basics of these recipes at their matriarch's hip over the course of years. In 1984 a surveyor from the town's Environmental Health office made a call on an elderly gentleman living in Mendip Road, Bedminster to assess the property. The old chap seemed one and anxious to chat in common with many pensioners living alone but the story this man had to tell was a remarkable one. During the time the officer was carrying out his study he was to hear of startling events that had taken place 60 years before. The old man was called George Cooper and in January 1924 he was a leading figure in what the papers dubbed The Brislington Villa Murder story. George's father was also called George and together with his wife Louisa (aged 57) had lived in Montrose Avenue, Brislington for about 20 years at that space. Previously they had lived in Bedminster.
